Learn how to cook steel-cut oats in an Instant pot and different topping ideas to make your breakfast colorful and nourishing!

Who doesn't love quick and instant breakfast on a busy weekday? And as breakfast is the first meal of the day, I like to cook it fresh and Instant pot is of great help here.
If you like to cook for the whole family or the entire week, an Instant pot is handy and a hands-free cooking option.
How to cook steel cut oats in an Instant pot
- Add steel-cut oats to the Instant pot inner pot.
- Now add water and a pinch of salt to it.
- Close the instant pot with its lid and start the instant pot in manual or pressure cook mode. Cook it for 5 minutes on HIGH pressure.
- Once the instant pot beeps, turn it off and let the pressure release naturally. It will take around 15 to 20 minutes. And open the instant pot lid.
- Stir in the coconut milk and sweetener of your choice. Mix the oatmeal well.
- Serve it warm with lots of fresh fruits. I love to add nuts for added crunch.
Steel-cut oats topping ideas:
- Apple steel cut oats: You can add the grated or chopped apple while you cook steel cut oats in the Instant pot or add them as a topping. I prefer later. Fresh juicy apple, when combined with creamy oatmeal, will taste soo good! Do not forget to add a pinch of cinnamon powder or nutmeg powder!
- Banana steel cut oats: Chopped bananas with peanut or almond butter is the best oatmeal topping. Depending on your bananas taste, adjust the sweetener. Again a pinch of cinnamon or nutmeg, or vanilla powder is a good addition.
- Top the oatmeal with nuts like almonds, cashews, pistachios, walnuts, and seeds like pumpkin, flaxseeds, sunflower seeds for added crunch and nutrition.
- Do not have fresh fruits handy? Then you could add any dried fruits and berries like raisins, dried cranberries, dried figs, dried blueberry.
- Adding nut butter will make the oatmeal creamy.

Recipe Notes and variations:
- Don't have coconut milk? Don't worry! You could use any plant-based milk or regular milk. Or you can skip it altogether. But adding milk will make the oatmeal creamy.
- You can use any plant-based milk for cooking oats instead of water. However, do not use regular milk for cooking the oats as it can get burnt.
- Salt is optional, but it enhances the overall taste of the oatmeal.
- You could use any healthy sweeteners like honey, maple syrup, molasses, jaggery, coconut sugar, palm sugar.
How to store leftovers?
Cooked steel cut oats stay good for about 4 days in the refrigerator, but I like to use them up quickly. If you are planning to use them for a long time, freezing would be ideal.
Divide the cooked steel-cut oats into individual portions and freeze them so that you can thaw them when in need. I usually like to freeze them in small stainless steel boxes, but you can check this post to save them in freezer-safe ziplock bags.
