Step 1: Cooking steel cut oats
I love to cook steel-cut oats in an Instant pot as I can cook in large quantities, and it is a handsfree method, ideal for busy mornings.
However, if we want to cook for a single person or single-portion, the stovetop method is the best.
How to cook steel cut oats in an Instant pot
- Add steel-cut oats to the Instant pot inner pot. Now add water and a pinch of salt to it.
- Close the instant pot with its lid and start the instant pot in manual or pressure cook mode. Cook it for 5 minutes on HIGH pressure.
- Once the instant pot beeps, turn it off and let the pressure release naturally. It will take around 15 to 20 minutes.
- Open the lid and stir it once. Instant pot steel cut oats are ready.
How to make stovetop steel-cut oats:
- I prefer soaking the oats overnight if cooking them on a stovetop pan as it will save a lot of time.
- Soak oats in water for an hour or so. If you are soaking them overnight, then keep them in the refrigerator.
- Cook the soaked steel cut oats using the same water for around 15 minutes until it is done.
- You will need around 5 cups of water for every 1 cup of steel-cut oats when cooking on an open flame.
- It might take around 15 to 20 minutes to cook the steel-cut oats using the stovetop method.
Step 2: Making savory steel cut oats
- Add yogurt to the cooked steel-cut oats and mix it well. Here I used coconut yogurt, but any yogurt works for this recipe.
- Now add chopped veggies, pepper powder, salt, cumin powder, and mix it well. I have used tomatoes and cucumber here, and you could use any veggies of your choice.
- Serve the savory oatmeal warm and enjoy it for breakfast, lunch, or dinner. Yes, you can serve this savory oatmeal even for lunch or dinner.
Recipe Notes and variations:
- As we are making savory oatmeal, yogurt works best. But what if you don't like yogurt or don't have it handy? You can use coconut milk as it tastes well with savory flavors.
- Yogurt or milk will make the oatmeal creamy. You can skip both yogurt and coconut milk and add any nut butter.
- I have used cucumbers and tomatoes here and used them raw. You could use grated carrots as well in this recipe.
- Don't like raw veggies? Then try adding steamed veggies like broccoli, corn, carrots, beans, pumpkin and use them as toppings.
- Don't like to include veggies? Then a banana or mango is a good topping option as these fruits pair well with yogurt.
- I like to add stir-fried bell peppers, mushrooms, cabbage to this savory oatmeal if I serve it for lunch or dinner.
- Do you want to include greens in this recipe? Then stir fry kale, moringa leaves, or any green leafy veggies and mix into this steel-cut oats.
- I have used simple seasoning here with just pepper powder and cumin powder. If you are looking for more flavors, you can try curry powder, cajun spice mix, or Mexican spice mix.
