Black-eyed peas curry  (Indian Lobia recipe)

Ingredients

Black-eyed peas Tomato Aromatics Indian spices Oil 

Prep work

Soak the dried black-eyed peas for at least 6 hours. You can soak them overnight as well. Discard water and rinse the peas. Chop the tomato and onions.

Step 1

Start the Instant pot in saute mode and add oil, bay leaf, cloves, cardamom, chopped ginger.

Step 2

Add finely chopped onions and let it cook for a couple of minutes.

Step 3

Now add the chopped tomatoes and mix them well.

Step 4

Add the spice powders - cumin, turmeric, coriander powder, red chili powder, garam masala powder, and salt. Mix this well.

Step 5

Add rinsed black-eyed peas. I used red colored black-eyed peas here.

Step 6

Mix it well so that the tomato mixture is coated well with these black-eyed peas.

Step 7

Add water to the Instant pot inner pot. Start the Instant pot in manual mode and cook for 8 minutes on HP.

Step 8

Once the Instant pot finishes cooking, wait for 10 minutes and carefully release the pressure.

Step 9

The delicious Indian spiced black-eyed peas curry is ready to serve with piping hot basmati rice .
