Main Ingredients

Black-eyed Peas Veggies Tomato Water Spices & aromatics

Prep work

Cook the black-eyed peas and keep them aside. You can use canned peas also.

Finely chop the onions, tomatoes.

Chop the veggies and keep them aside.

Step 1

Heat a thick-bottomed pan and add oil to it.

Step 2

Once it is hot, add bay leaves, garlic, and chopped onions.

Step 3

 Add chopped carrots and beans to the pan and cook for 4 to 5 minutes on medium flame.

Step 4

Then goes finely chopped tomatoes and let it cook for a few more minutes.

Step 5

Add finely chopped bell peppers and stir it once.

Step 6

Add spice powders to this veggie mixture. Mix it well.

Step 7

Now add cooked black-eyed peas and water to the pan.

Step 8

Let the black-eyed peas soup simmer on a medium flame for around 12 to 15 minutes.

Step 9

You can add more water to adjust the consistency.

And the delicious vegetable black-eyed peas soup is ready to serve!
