Chana Saag Curried Chickpeas and Spinach

What is Saag Chana

Chana Saag is an Indian curry with chickpeas cooked in a base of leafy greens.  Saag means green leafy curry. Chana means chickpeas. This is a healthy and delicious vegan, gluten-free curry.

Ingredients

Spinach Chickpeas Tomato Onion Indian spices Oil 

Prep work

Wash the spinach leaves and drain the water. Finely chop the spinach, onion, ginger & garlic. Cook the chickpeas and keep them aside.

Step 1

Heat a pan, add oil, onions, ginger, garlic and slit green chili.

Step 2

Add spice powders & salt.

Step 3

 Mix everything well and make sure that it isn't burnt.

Step 4

Add finely chopped spinach and cook it on high flame.

Step 5

Once it cools down, make a coarse or smooth paste as you like.

Step 6

 Heat a pan and add oil, chopped tomatoes. Cook them for a couple of minutes.

Step 7

Add cooked chickpeas, salt, water and red chili powder. Simmer for 4 to 5 minutes.

Step 8

To this chickpeas mixture, add the saag sauce and mix everything well.

Step 9

Adjust the water and let it simmer for 3 or 4 minutes. Add cashew cream if using.

Step 10

Delicious & healthy chana saag is ready to serve with basmati rice or naan bread.
