Chickpeas Rice

Basmati rice
Chickpeas
Coconut milk
Veggies
Spices

Prep work
Wash, drain, and keep the rice aside.
Cook the chickpeas and keep them ready.
If using canned chickpeas, drain and rinse them well.
Chop the veggies and keep them aside.

Heat a pan or Instant pot. Once it is hot, add oil, cumin seeds, bay leaf, and cardamom.

Add sliced onions and let them brown a little bit.

Then goes chopped veggies and chopped tomato.

Add all the spice powders and mix them well.

Now add cooked chickpeas and stir it once.

Add coconut milk, water, and rice. Mix everything well.

If using an Instant pot, cook it for 5 minutes. For the stovetop method, cook till the rice is done.
