BLACK BEAN CURRY

Main Ingredients

Black beans Coconut milk Tomato Spices & aromatics

Prep work

Cook the black beans and keep them aside. 

Finely chop the onions, tomatoes.

If using canned beans, drain and rinse them.

Step 1

Heat a pot. Once it is hot, add oil,  bay leaves, grated ginger, garlic, and finely chopped onions.

Step 2

To this onion mixture, add finely chopped bell pepper and saute it for a couple of minutes.

Step 3

Add finely chopped tomatoes and cook for 4 to 5 minutes.

Step 4

Once tomatoes soften, add spice powders.

Step 5

Now add black beans and give a good mix.

Step 6

Add coconut milk and simmer the curry for 5 minutes over medium heat.

Creamy and delicious black bean curry is ready to serve.
