Instant pot  Chickpea curry  (Easy & Vegan recipe)

Main Ingredients

Chickpeas Coconut milk Veggies Curry powder Spices Oil Salt

Chop the veggies and keep them aside.

Step 1

Start the Instant pot in saute mode. Once it is hot, add oil, bay leaves, onion, ginger. Cook this mixture for 3 to 4 minutes.

Step 2

Add chopped tomatoes and let it cook for a further 3 to 4 minutes.

Step 3

It's time to add chopped veggies. Stir them well and let them roast for a couple of minutes.

Step 4

Add spices (curry powder, coriander powder, cumin powder, turmeric powder, garam masala) and salt. Mix everything well.

Step 5

Now add cooked chickpeas and stir it once.

Step 6

Add coconut milk and stir it well. Close the Instant pot. Stop the saute mode and start the Instant pot in manual or pressure cook mode for 2 minutes.

Step 7

Once the Instant pot turns off, wait for 5 minutes and manually release the pressure. Delicious and easy Instant pot vegetable curry is ready to serve.
