Main Ingredients

Prep work

Wash the lentils. Drain and keep it aside.

Finely chop the onions, tomatoes.

Wash, peel, and chop the potatoes into 1 to 1.5-inch cubes.

Step 1

Start the Instant Pot in saute mode. When it's hot, add oil, ginger, garlic, onions, and bay leaves.

Step 2

Cook the onions for a couple of minutes, then add chopped tomatoes.

Step 3

Let the tomatoes get soft, and add spices - turmeric, red chili, dried thyme, cumin, coriander, and salt. Mix well.

Step 4

Now, put in potato cubes and lentils. Stir.

Step 5

Add water and check the salt. Adjust if needed.

Step 6

Turn off sauté mode and pressure cook for 10 minutes on high  pressure.

Step 7

Once finished, add chopped kale to the lentil soup and stir. Close it for 10 minutes.
