Ridge gourd Onion Aromatics Spices Oil

Prep work

Wash, peel and chop the ridge gourd.

Chop onions, grate garlic and keep them aside.

Step 1

Heat a pan, add oil, mustard, and cumin seeds.

Step 2

Once the cumin seeds start to pop, add curry leaves, garlic.

Step 3

Add onion and cook it on medium heat for 3 to 4 minutes.

Step 4

Add ridge gourd, mix and cook for 5 to 6 minutes.

Step 5

When the ridge gourd is nearly cooked, add spices and salt.

Step 6

Mix well and cook for 4 to 5 minutes on low-medium heat.

Step 7

If you're using coconut powder, add it now and mix.

Serve this tasty curry with rice or flatbread while it's hot.
