Zucchini Carrot  Stir fry Quick & easy recipe

This vegan and gluten-free zucchini & carrots side dish pairs very well with quinoa, rice, pasta, tortilla and toasted bread.

Ingredients

Zucchini Carrot Aromatics Spices Oil

Prep work

I used green zucchini and sliced it into thin strips. Shred the carrots and keep them aside.

Step 1

Heat a skillet and add oil, finely chopped onion, garlic, and dried thyme.

Step 2

Add chopped zucchini and cook it on high flame for a couple of minutes.

Step 3

Season the zucchini with freshly ground black pepper and salt.

Step 4

Then goes the shredded carrots and stir them once.

Step 5

Let the carrots zucchini mixture cook on high flame for around 2 to 3 minutes.
