This corn paneer chaat salad combines steamed corn, lightly seared paneer, and chopped vegetables with green chutney, lemon, and roasted cumin. Serve as a light lunch, a side, or a wrap filling.
Taste before adding salt, as the green chutney already contains salt. Add a little only if needed.

Tested Tips from My Kitchen
Corn options. I used steamed corn, but grilled corn works too. If using canned corn, rinse and drain well before mixing.
Salt. The green chutney already contains salt, so taste the mixed salad before adding more.
Chutney variation. I use only green chutney because the corn is slightly sweet. For a sweet and tangy version, replace the tablespoon of green chutney with 1 teaspoon each of green chutney and tamarind sauce. Taste before adding more.
Paneer options. I lightly pan-sear the paneer. You can also use my Indian spiced roasted paneer. Skip the extra salt when using this, as the paneer is already seasoned.
Serving. I pack this salad in lunch boxes and sometimes use it as a filling for rice paper rolls for my kids.
