pumpkin
cubes

garam masala

red chili

ground black pepper

coriander powder

ground cumin

teaspoon
turmeric

teaspoon
salt
Instructions
Preheat oven to 400°F (200°C).
Chop the pumpkin into even cubes.
Add cubes to a baking tray along with oil, salt, and spices. Toss well to coat.
4 cups pumpkin ,
2 teaspoon oil,
½ teaspoon garam masala,
¼ teaspoon red chili,
¼ teaspoon ground black pepper,
¼ teaspoon coriander powder,
¼ teaspoon ground cumin,
¼ teaspoon turmeric,
½ teaspoon salt
Spread cubes in a single layer for even roasting.
Roast for about 35 to 40 minutes, flipping once midway, until golden and fork-tender.
Serve these roasted pumpkin cubes with
Instant Pot moong dal
and
stovetop basmati rice
for a balanced, nourishing meal.

For crispier edges, roast for an additional 5 minutes.
Chop the pumpkin cubes into even-sized cubes so that all cubes are cooked well.
