With everyday spices and oven roasting, this recipe brings out the pumpkin's natural sweetness while adding bold Indian flavors.

    At home, I love roasting a tray while making dal in the Instant Pot and cooking stovetop basmati rice. By the time everything is ready, I have a warm, nourishing plate on the table.

    Pumpkin tastes naturally sweet, and roasting it with spices enhances that flavor beautifully.     Step 3: Toss well to coat evenly. Spread in a single layer on the tray.

    Step 4: Roast for 35 to 40 minutes, flipping once midway, until golden and fork-tender.

    Ingredients
      

    • 4 cups pumpkin cubes
    • 2 teaspoon oil
    • ½ teaspoon garam masala
    • ¼ teaspoon red chili
    • ¼ teaspoon ground black pepper
    • ¼ teaspoon coriander powder
    • ¼ teaspoon ground cumin
    • ¼ teaspoon turmeric
    • ½ teaspoon salt

    Instructions
     

    • Preheat oven to 400°F (200°C).
    • Chop the pumpkin into even cubes.
    • Add cubes to a baking tray along with oil, salt, and spices. Toss well to coat.
      4 cups pumpkin, 2 teaspoon oil, ½ teaspoon garam masala, ¼ teaspoon red chili, ¼ teaspoon ground black pepper, ¼ teaspoon coriander powder, ¼ teaspoon ground cumin, ¼ teaspoon turmeric, ½ teaspoon salt
    • Spread cubes in a single layer for even roasting.
    • Roast for about 35 to 40 minutes, flipping once midway, until golden and fork-tender.
    • Serve these roasted pumpkin cubes with Instant Pot moong dal and stovetop basmati rice for a balanced, nourishing meal.
