This Indian corn chaat salad combines steamed corn with cucumber, tomato, onion, and fresh coriander. Green chutney adds the seasoning, so there is no need for a separate dressing or extra spice powders. It is a simple steamed corn salad that fits easily into everyday Indian meals.
Once the corn is steamed, the salad takes about 10 minutes to put together. Chop the vegetables, mix in the chutney, and taste before adding salt. In my kitchen, this is a reliable busy-weekday side because I can keep steamed corn and chutney ready and only chop the vegetables before serving. It goes well with khichdi, yogurt rice, or dal and rice.

Green Chutney Does All the Dressing Work

I used only Indian green chutney as the dressing because the corn already adds sweetness. The herbs and heat from the chutney balance it well, and I do not add chaat masala or lemon juice to this version.
If you like the sweet-tangy flavor of tamarind in chaat, as I use in my Chana Chaat, combine a little green chutney with Indian tamarind sauce. Start with the amounts in the recipe notes, then taste before adding more. Corn already has some sweetness, so a little tamarind sauce can change the balance quickly.

Step 1: Add the steamed corn, chopped cucumber, tomato, onion, coriander, and green chutney to the mixing plate.

Serving Tips
At home, I like serving this corn chaat alongside soft rice dishes because the crisp cucumber and onion add a nice contrast. It also works well as a light side, or you can add a roasted protein when you want a more filling meal.
- With rice: Serve it with South Indian yogurt rice or khichdi. The fresh vegetables add a crisp contrast to these soft, comforting dishes.
- With roasted sides: Pair it with Indian spiced roasted paneer or Indian spiced roasted vegetables for a more complete meal.
- To make it more filling: Add Indian spiced oven-baked tofu or Indian spiced roasted chickpeas. I usually add roasted chickpeas just before serving so they keep some of their crunch.
- For meal prep: Steam the corn and chop the vegetables ahead of time. Keep them refrigerated separately, then mix everything with the green chutney just before serving. Taste the salad before adding salt, since the chutney already brings seasoning.

Ingredients

Notes
Tested Tips from My Kitchen
- Corn options: I used steamed corn for this recipe, but you can also use grilled corn.
- Canned corn: Rinse canned corn well to remove some of the added salt. Drain it well before mixing it with the vegetables.
- Salt: Taste the salad after adding the green chutney. You may not need any extra salt.
- Chutney variation: Corn is slightly sweet, so I used only green chutney in this version. For a sweet-tangy variation, use 1 teaspoon green chutney and 1 teaspoon Indian tamarind sauce instead of 1 tablespoon green chutney. Mix, taste, and add more only if needed.
- Add potatoes: Add boiled potatoes or boiled sweet potato along with the vegetables for a heartier variation.
- Make it more filling: Add roasted tofu or roasted chickpeas. I like adding roasted chickpeas just before serving so they keep some of their crunch.
