I make this recipe when I have several vegetables to use at once. The same tray can be served with rice and dal, added to wraps, or used in salads and bowls the next day.

My Easy Way to Use Mixed Vegetables

I often have small amounts of different vegetables left in the refrigerator. Apart from making a mixed vegetable curry, I also roast them together. It is an easy way to use several vegetables without preparing a separate curry base.
For this recipe, I used butternut squash, carrots, beets, potatoes, bell peppers, and cauliflower. You do not need to use the same combination every time. I change the vegetables depending on what I have available.
The main thing to remember is that different vegetables cook at different speeds. Firm vegetables such as potatoes, carrots, and beets take longer, while bell peppers and softer vegetables roast more quickly. Cutting the firmer vegetables slightly smaller helps when roasting everything on the same tray.

How to Make Roasted Veggies

Step 1: In a large mixing bowl (I used a baking tray directly), add the chopped veggies and all the ingredients.

Step 2: Toss until the veggies are fully coated. Spread them in a single layer.

Step 3: Roast for 30 to 40 minutes, flipping halfway through or until tender. Remove it from the oven once it is golden brown and serve it hot.
How to Roast Different Vegetables Together
All the vegetables do not need the same cooking time, so the way you cut them matters. I usually cut firm vegetables such as potatoes, carrots, beets, sweet potatoes, and squash into smaller pieces. Bell peppers and other faster-cooking vegetables can be kept slightly larger.
When you roast a mixture of vegetables, start checking them as they approach the end of the cooking time. Remove the tray when the firm vegetables are tender, and the edges are browned.
If you roast only one type of vegetable, the cooking time can change. Bell peppers will usually be ready sooner, while potatoes take longer to become tender. The size of the pieces also affects the roasting time, so use the recipe time as a guide rather than relying only on the timer.

Easy Indian Spiced Roasted Vegetables

Ingredients
- 4 cups veggies
- 1 tablespoon oil
- ยผ teaspoon red chili powder
- ยผ teaspoon turmeric powder
- ยผ teaspoon cumin powder
- ยผ teaspoon coriander powder
- ยฝ teaspoon garam masala
- 1 teaspoon salt
- ยผ teaspoon pepper powder
Instructions
- Prep: Preheat your oven to 200ยฐC (400ยฐF). Chop the vegetables evenly to ensure they roast at the same time.
- Mix the Veggies: In a large bowl or a baking tray, add chopped vegetables, spice powders, salt, and oil. Mix them well so that the spice powders are coated evenly on all the veggies.4 cups veggies, 1 tbsp oil, ยผ tsp red chili powder, ยผ tsp turmeric powder, ยผ tsp cumin powder, ยผ tsp coriander powder, ยฝ tsp garam masala, ยผ tsp pepper powder, 1 tsp salt
- Roast until Tender: Spread the vegetables in a single layer on a baking tray( line with parchment paper if needed). Roast for 30 to 40 minutes, or until tender, flipping the vegetables halfway through to ensure even cooking.
- Serve and Enjoy: Once tender and golden brown, remove from the oven and serve hot.
