This chaat-style salad dressing uses individual pantry spices to create a familiar chaat-inspired flavor. The black salt adds a savory note, while roasted cumin, coriander, pepper, and chili create gentle warmth.
I keep this dressing on hand because it turns a plain bowl of cucumber or tomato into a real side dish without extra work on a busy weekday. A few spoonfuls over chickpea cucumber salad or kachumber salad makes either one feel finished.
The oil is optional, so this dressing stays light. If you want more of a chaat-style tang, add the red chili powder. If you prefer a milder version, leave it out and let the roasted cumin do the work.
I originally made this dressing for my Indian grilled corn salad, and I now use it whenever a simple chopped salad needs a quick flavor boost.
