This Indian-spiced sauteed green peas recipe is one of those simple vegetable sides that come together quickly with pantry spices. I often make this on busy weekdays when I need an extra vegetable on the plate without much planning.

    This Indian style green peas curry is lightly spiced, not saucy, and works beautifully with rice, flatbreads, or even as a topping for bowls.

    What I love about this recipe is how adaptable it is. The same spice base I use here works beautifully in everyday vegetable dishes like sautéed pumpkin, spinach saag, or Indian zucchini curry. Once you learn this simple sauté method, you can apply it to many vegetables with confidence.

    In my kitchen, this dish often plays more than one role. Sometimes it's a quick side with rice. Other times, I reuse leftovers in wraps or salads the next day. The gentle spices coat the peas evenly without overpowering them, which makes this curry easy to pair with many meals.

    Detailed Steps

    Cumin seeds, chopped garlic, and green chili heating in oil.

    Step 1: Heat a skillet and add oil. Add cumin seeds, green chili, and garlic. Let the cumin seeds splutter.

    Step 2: Add the finely chopped onions and sauté for a couple of minutes until soft.

    Ground spices and salt added to sautéed onions in the pan.

    Step 3: Add turmeric, coriander powder, garam masala, and salt.

    Step 4: Mix well. Keep the heat moderate so the spices don't burn.

    Ingredients
      

    • 2 cups green peas fresh or frozen
    • ½ cup onion finely chopped
    • 1 teaspoon garlic chopped
    • 1 green chili slit lengthwise
    • ½ teaspoon coriander powder
    • ½ teaspoon cumin seeds
    • ¼ teaspoon turmeric powder
    • ½ teaspoon garam masala powder
    • 1 teaspoon oil
    • ½ teaspoon salt

    Instructions
     

    • Heat a skillet and add oil. Once the oil is hot, add cumin seeds, slit green chili, and chopped garlic.

    • Let the cumin seeds splutter gently as this step releases their aroma and sets the base flavor.
    • Next, add the finely chopped onions and sauté for a couple of minutes until they soften.

    • Now add turmeric, coriander powder, garam masala, and salt. Stir quickly so the spices coat the onions evenly. Keep the heat moderate so the spices don't burn; this small step helps the final dish taste balanced rather than bitter.

    • Add the green peas and mix well.
      2 cups green peas
    • Sauté fresh peas for about 5 to 6 minutes until tender.
    • If using frozen peas, 3 to 4 minutes is enough.
    • Once the peas are cooked to your liking, turn off the heat and serve them warm.
