    Vegetable sides for Indian flatbreads, such as chapati, naan, and paratha, make every meal complete. In this post, I'm sharing my favorite everyday recipes from my kitchen, along with a few unique curries I enjoy making on special occasions.

    I love making simple, everyday meals that my family enjoys, and vegetables are always at the center of our plates. On busy weekdays, I prefer quick stir-fries or dry curries; on weekends, I make rich curries for a more relaxed spread.

    Vegetable dishes have always been the quiet heroes on our table. A simple stir-fry with chapati often makes a complete lunch, while a creamy spinach curry with naan feels festive and indulgent. These are some of my favorite vegetable sides that I cook often at home; each one pairs beautifully with chapati, naan, or paratha.

    This recipe is a modern twist I love making on days when I don't feel like standing at the stove. Toss your favorite vegetables with Indian spices, roast them, and you'll have a tray of smoky, tender-crisp veggies ready to serve.
    Pair with: The dry texture of the roasted veggies is wonderful with flaky parathas. I also love wrapping them inside a chapati for a quick, healthy lunch.
