Sautéing
The Instant Pot's Sauté function is crucial for building flavor. Pressure Cooking

- Water-to-Lentil Ratios:
- Generally, a 1:2 or 1:2.5 ratio of lentils to water works well, but this can vary.
- For creamier dals, you might use more water.

- Cooking Times:
- Masoor dal cooks very quickly (4-6 minutes).
- Moong dal also cooks relatively fast (5-6 minutes).

- Chana dal takes the longest (12 - 15 minutes).

Tempering (Tadka)
Tempering is an essential step in many dal recipes. This process involves heating spices in oil or ghee and then adding them to the cooked dal, which infuses the dish with a burst of flavor.
You can either do this in the Instant Pot before pressure cooking or separately in a pan, then pour it over the dal just before serving. To simplify the process and prepare everything in one pot, I first make the tempering in the Instant Pot and set it aside before the pressure cooking step. After the dal is done, I add the tempering back in for the final garnishing.

Texture
The Instant Pot allows you to control the final texture of your dal.
- For a creamy and smooth dal, use more water and cook the lentils until they are very tender. You can also use an immersion blender to puree the dal slightly after cooking.
- For a more textured dal, use less water and cook the lentils for a shorter time, allowing them to retain some of their shape.

- Soaking Lentils: While not always necessary, soaking lentils for 30 minutes to an hour can help them cook more evenly and quickly, especially for tougher lentils like chana dal.
- Water Ratios: As mentioned earlier, start with a 1:2 or 1:2.5 ratio, and adjust based on the desired consistency. Remember that the Instant Pot minimizes water evaporation, so you typically need less liquid than when cooking on the stovetop.
- Spice Variations: Experiment with different spice combinations to create your own unique dal flavors. Some popular spices include:
