    Instant Pot Dal Recipes – Easy Indian Lentil Dishes with Tips & Timings

    Love the comfort of a warm bowl of dal, but don't have time to watch the pot? These Instant Pot dal recipes make it easy to enjoy perfectly cooked Indian lentils in minutes, with no stirring and no babysitting required.

    From creamy, mellow moong dal to tangy South Indian sambar-style toor dal, each recipe here is tried, tested, and made often in my kitchen. You'll also find water ratios, cooking times, and my go-to flavoring tips so you can make dal exactly the way you like it, every single time.

    What is Dal (Daal)?

    Dal refers to both the lentils themselves and the hearty, flavorful dishes made from them. Here are some of the most common types of lentils used in Indian cooking:

    • Toor Dal (Split Pigeon Peas): A yellow lentil with a slightly sweet flavor, commonly used in South Indian Sambar and many North Indian dal preparations.
    • Moong Dal (Split Yellow Lentils): A light and easily digestible lentil, often used to make creamy dals and even desserts like Moong Dal Halwa.
    • Masoor Dal (Split Red Lentils): A quick-cooking lentil that becomes quite soft when cooked, ideal for thickening dals.
    • Chana Dal (Split Chickpea Lentils): A dense, nutty lentil that holds its shape well, often used in more textured dal preparations.
    • Urad Dal (Split Black Gram): Used to make creamy and rich dals, like Dal Makhani (though the whole form is used for that).

    Dal preparation varies significantly across India. Northern dals often feature richer, creamier textures with the use of ghee and spices like cumin, coriander, and garam masala.

    Southern dals, on the other hand, frequently incorporate tangy flavors from tamarind or tomatoes and often include vegetables, as seen in Sambar. Each region boasts its own unique spice blends and cooking techniques, resulting in a wide array of delicious dal dishes.

    Essential Instant Pot Dal Cooking Techniques

    Mastering these Instant Pot techniques will help you create perfect dal every time:

    Sautéing

    The Instant Pot's Sauté function is crucial for building flavor. Sautéing spices in oil or ghee (a process known as tadka or tempering) releases their aromatic compounds, creating a fragrant base for your dal. You'll often sauté ingredients like cumin seeds, mustard seeds, ginger, garlic, and onions before pressure cooking the lentils.

    Pressure Cooking

    Pressure cooking significantly reduces the cooking time of dal. However, different types of lentils require varying cooking times and water-to-lentil ratios to achieve the desired texture.

    • Water-to-Lentil Ratios:
      • Generally, a 1:2 or 1:2.5 ratio of lentils to water works well, but this can vary.
      • For creamier dals, you might use more water.

    • Cooking Times:
      • Masoor dal cooks very quickly (4-6 minutes).
      • Moong dal also cooks relatively fast (5-6 minutes).
      • Toor dal and Brown lentils take longer (8-12 minutes).
      • Chana dal takes the longest (12 - 15 minutes).
      • Check individual recipes for specific cooking times.

    Tempering (Tadka)

    Tempering is an essential step in many dal recipes. This process involves heating spices in oil or ghee and then adding them to the cooked dal, which infuses the dish with a burst of flavor.

    You can either do this in the Instant Pot before pressure cooking or separately in a pan, then pour it over the dal just before serving. To simplify the process and prepare everything in one pot, I first make the tempering in the Instant Pot and set it aside before the pressure cooking step. After the dal is done, I add the tempering back in for the final garnishing.

    Texture

    The Instant Pot allows you to control the final texture of your dal.

    • For a creamy and smooth dal, use more water and cook the lentils until they are very tender. You can also use an immersion blender to puree the dal slightly after cooking.
    • For a more textured dal, use less water and cook the lentils for a shorter time, allowing them to retain some of their shape.

    Tips for the Best Instant Pot Dal

    • Soaking Lentils: While not always necessary, soaking lentils for 30 minutes to an hour can help them cook more evenly and quickly, especially for tougher lentils like chana dal.
    • Water Ratios: As mentioned earlier, start with a 1:2 or 1:2.5 ratio, and adjust based on the desired consistency. Remember that the Instant Pot minimizes water evaporation, so you typically need less liquid than when cooking on the stovetop.
    • Spice Variations: Experiment with different spice combinations to create your own unique dal flavors. Some popular spices include:
      • Cumin seeds
      • Mustard seeds
      • Turmeric powder
      • Garam masala
      • Ginger
      • Garlic
      • Chili peppers
      • Curry leaves

    • Adjusting Consistency:
      • To thicken the dal, simmer it on Sauté mode after pressure cooking, allowing some of the liquid to evaporate. You can also mash some of the lentils against the side of the pot.
      • To thin the dal, add more water or vegetable broth and stir it in.
    • Storage and Reheating:
      • Leftover dal can be stored in an airtight container in the refrigerator for 3 to 4 days.
      • Reheat gently on the stovetop or in the microwave, adding a little water if needed to loosen it up.

    Serving Suggestions

    A bowl of dal is endlessly versatile, and these serving ideas will help you turn it into a complete, satisfying meal:

    • With rice: Nothing beats the classic combination of dal and steamed basmati rice for everyday comfort. On days when I have extra time, I serve it with flavorful Indian basmati rice for a richer pairing.
    • With roti or paratha: Soft roti or flaky paratha makes a perfect scoop for dal. My family especially loves it with spinach paratha, avocado paratha, or zucchini paratha.
    • With other grains: For a healthier twist, try serving dal with quinoa, millet, or any grain you enjoy. My millet recipe collection has plenty of ideas.
    • With fresh sides: A scoop of this Indian tomato onion salad or a crunchy cucumber peanut salad adds freshness and texture to the meal.
    • With yogurt or chutney: A spoonful of plain yogurt or a tangy chutney can beautifully balance the spices.
    • For extra flavor: A drizzle of ghee, fresh cilantro, or a squeeze of lemon just before serving can elevate even the simplest dal.

    With the Instant Pot, making delicious dal or lentil-rice dishes becomes effortless. You set it, forget it, and come back to a comforting meal. Whether you're in the mood for a simple everyday dal or a more elaborate, spice-rich version, the Instant Pot gives you consistent results every time.
