    Bok choy fried rice

    Bok choy fried rice with millet - a quick and simple way to flavor the millet or rice with bok choy and Indian spices.

    This recipe is my version of Indian cumin rice, and I have used bok choy to make this dish interesting and healthy. Though we do not use bok choy in Indian dishes, I like to add it.

    If you do not like cabbage (like me!), try this vegetable. It has a mild flavor and will be crunchy even on cooking. Check my carrot poriyal recipe where I used bok choy to make it colorful, tasty, and healthy.

    Let's begin making the bok choy fried rice recipe:

    • Cook millet or rice and keep it aside. Cooled rice or millet works best here. Check my detailed post on how to cook millet.

    • Heat a wide pan and add oil to it.
    • Once it is hot, add cumin seeds, cardamom, cloves, peppercorns, mace, and let them splutter.
    • Now add chopped bok choy and cook it on high flame for a couple of minutes.
    • Bok choy will wilt like this in few minutes.
    • To this wilted bok choy, add cooked millet and salt.
    • Mix it well and let it heat for 5 minutes on medium flame. Stir it in between to avoid the food burn.
    • Once the millet or rice is evenly heated, switch off the flame. Serve it hot!
    • You can enjoy this bok choy fried rice with any Indian dal, raita, and some crunchy veggies.

    Recipe Notes and variations:

    • In this recipe, I have used cooked millet. But you can make this recipe with cooked rice or cooked quinoa.
    • I have used cumin seeds, cardamom, and cloves for flavor. And these go well with bok choy. You can skip these and instead add soy sauce and pepper powder for that Asian-style fried rice.
    • Instead of bok choy, you can also use kale to make this fried rice recipe.
    • Leftover millet or rice works best for making this fried rice. Cook some extra rice or millet during your lunch and make this fried rice for a quick dinner.
    • You can have any Indian dal or gravy curry as a side dish for this millet fried rice.
    • To make this a complete meal by itself, you can add pan-fried tofu or paneer.
    • As this dish is mildly flavored, kids will like it and a good lunch box option.

    Ingredients
      

    • 4 cups cooked millet
    • 1 cup chopped bok choy
    • 1 teaspoon cumin seeds
    • 3 cloves
    • 2 cardamom
    • 8 pepper corns (you can use pepper powder also)
    • 1 strand Mace
    • 1 tablespoon oil
    • Salt to taste

    Notes

    1 cup of raw millet will yield approximately 4 cups of cooked millet.
